The main difference between large bagels, medium bagels and small bagels is due to different baking technologies. At the same time, the preparation of the latter is the most labor-intensive, and each stage of the technological process lasts longer.

Important! Despite the high calorie content of dry breads, they are healthier for your figure and health than bagels or bagels. This is due to the fact that fresh soft baked goods are more difficult to digest and put a greater strain on the gastrointestinal tract, while well-dried dough does not have such a harmful effect.

Almost all of the products studied (21 out of 22 samples) were manufactured in Russia, one product was made in Belarus. Each sample was examined for 36 quality and safety parameters. A study conducted by Roskachestvo showed that in this product category, among the most popular brands of dryers in Russia, there is not a single one of poor quality. This happened for the first time in history! However, only eight out of 22 samples reached the increased standard of Roskachestvo, seven of which - Golden Kolobok, Every Day, Karavay, Nevskaya, O'KEY ("small ones" with poppy seeds), ARO and Clever - are of domestic origin. The decision to award them the Russian Quality Mark will be made after a technical audit of the enterprises, including determining the level of localization of production.

The nutritional value

Like any flour product made from premium white flour, drying does not belong to the category of healthy food products. However, they have a certain nutritional value, although against the background of a very high calorie content and the presence of a large number of “empty” calories, it is significantly lost.

Boil in salted water until they float. Transfer to a baking sheet lined with parchment and bake in the oven at 230ºC for half an hour. The calorie content of simple dryers is 299 kcal/100 g.

Lenten

Mix 300 g of sifted wheat flour, 2.5 g of baking powder, 1 tsp. with a heap of granulated sugar and ¼ tsp. salt. Pour 25 ml of sunflower oil into 150 ml of cold water, add the mixture to the flour and knead into a thick dough. If necessary, add a little flour or water so that the dough is tight enough and does not stick to your hands. Leave the dough to “rest” for half an hour. Then cut into small pieces, each is rolled between the palms into a rope and twisted into a ring. If you need to get circles of perfectly the same size, then use 2 glasses of different diameters, with which you cut out the blanks. Place on a baking sheet and bake at 200ºC until golden brown (about 20 minutes). The calorie content of lean drying will be 259 kcal/100 g.

With poppy seeds

Break 2 eggs into a cup, pour in 1 can of condensed milk, add 1 pack of vanilla sugar, a pinch of salt and 50 g of butter or margarine. Stir the mixture and set aside.

In a separate bowl, combine 600 g of sifted wheat flour and ½ tsp. soda Pour in the liquid mixture and knead into a dough that is not too tight and not very soft, but should be a little sticky.

Pinch off a piece the size of a walnut, roll it into a flagellum 1 cm thick or even less: the thinner the flagella, the crispier the baked goods. Form rings and place them on a parchment-lined baking sheet.

Beat 1 yolk with 1 tbsp. l. milk. Lubricate the surface of the bagels with this mixture and sprinkle poppy seeds on top. Bake in an oven preheated to 200°C until golden brown (about a quarter of an hour). The calorie content of poppy seed cakes prepared according to this recipe is 360 kcal/100 g.

With fish filling

Bagels with fish filling are a hot appetizer that turns out tasty and elegant, so it’s perfect for both a family dinner and a holiday table. In addition, when prepared according to this recipe, the calorie content of dryings is reduced to 161 kcal/100 grams, and the process itself does not take much time.

For the filling take 200 g of fish. If it has bones, then it is boiled first, and the fillet is used raw, passed through a meat grinder. Boil the fish for about half an hour with the lid ajar, reducing the heat after boiling and skimming off the resulting foam. The finished fish is removed from the broth, allowed to cool and the meat is removed from the bones.

Pour boiling water over 3 tbsp. l. rice flakes and leave to steam for 5 minutes (or take the same amount of regular boiled rice). Pour 150 g of crispy bagels into another bowl, pour warm milk and leave for a quarter of an hour to soften.

At this time, mix the fish pulp with ready-made rice flakes or grains, beat in 1 chicken egg, add 2 tbsp. l. semolina and salt to taste. Stir until smooth and leave for 10 minutes for the semolina to swell.

Take the bagels out of the milk and fill them with fish filling. Dip in breadcrumbs or crushed cracker crumbs. Place in a frying pan heated with sunflower oil and fry on both sides until golden brown. Served warm, but even after cooling, this snack remains very tasty.

Stuffed with meat

Stuffed meat bagels differ from fish ones in being more nutritious, but they are prepared in almost the same way. And if you have ready-made minced meat, it’s also much faster. The calorie content of dried meat is also slightly higher and amounts to 195 kcal/100 g, solely due to the higher fat content. Therefore, the option with fish is more suitable for a dietary diet.

First, soak 200 g of dry bagels in warm water or milk, choosing unsweetened and not too salty varieties. Leave for soaking, and at this time prepare the filling. Grind 2 onions with a blender or through a meat grinder. Add the resulting mass to 300 g of minced pork, add chopped herbs, salt and spices to taste. Mix thoroughly.

Take out the swollen rings, laying them out on a cutting board or wide dish so that they dry slightly and do not break in your hands. Then fill with prepared minced meat. Fry in a frying pan in heated sunflower oil for 4 minutes on each side, carefully turning over with a wide spatula. Place the finished bagels in a dry container, allow to cool slightly, then transfer to a wide flat dish, decorate each with 1 tsp. mayonnaise, fresh herbs and canned corn.

With mushrooms

This recipe involves baking in the oven instead of frying in oil. But during the cooking process, individual components are fried, so in general this mushroom appetizer is not very healthy for the stomach. And since the calorie content of dryers in this design is 245 kcal/100 g, they are also undesirable for the figure.

Soak 18 small lambs in 1 glass of warm milk. Leave to swell. The filling is prepared from 50 g of champignons and 1 onion. Both components are finely chopped and fried in oil. Separately, fry 150 g of minced meat, seasoning with pepper and salt to taste. Mix mushrooms and meat, add 80 g of grated hard cheese and 40 ml of mayonnaise.

Remove the bagels from the milk, place them on a baking sheet lined with parchment paper and fill with the prepared filling. Bake in an oven preheated to 180ºC for 15 minutes. The appetizer turns out tender and tasty.

Sausages in a tube

Sausage in a bagel tube is an original and very simple dish that always turns out tasty and successful. The main thing is to choose sausages according to the size of the internal diameter of the bagels, and also take into account that the calorie content of the sausages in combination with the components of this recipe will increase to 231 kcal/100 g.

To prepare, peel 6 sausages from the film. Put 6 bagels on each so that they do not reach each edge by about 1 cm. Place the blanks in a pan, pour milk and leave for half an hour. Turn over periodically to ensure even soaking.

Grate 100 g of hard cheese on a coarse grater. Take out the sausages, place them on a baking sheet or in a baking dish, coat each one with sour cream or mayonnaise and sprinkle with grated cheese, distributing it evenly over the entire surface. Bake in the oven at 180ºC for 15–20 minutes. You can also cook in the microwave in 10-15 minutes.

In addition to snack dishes, sushi makes excellent dessert pastries that do not require kneading the dough. Most often it is made from vanilla bagels with curd filling. It is the vanilla variety that is distinguished by its high crunchiness and greater friability inside. But in the absence of such bagels, ordinary ones will do, but they need to be soaked in milk longer.

For 10 bagels you will need 1 glass of milk; the soaking process in the first option lasts 10 minutes, in the second – about half an hour. At this time, prepare the curd filling. Place about half a glass of cottage cheese in a bowl, add 1 tbsp. l. sour cream, 1 tbsp. l. granulated sugar and ½ tsp. vanilla sugar. Grind until smooth. If desired, add a few raisins, pre-steamed in boiling water, as well as poppy seeds, candied fruits or coconut flakes. But such additives are not included in the calorie content indicated in this recipe.

Separately, beat 1 egg with 1 tsp. milk and 1 tsp. granulated sugar. Take out the bagels swollen in milk, dip them on all sides into the egg mixture and place them in a frying pan with melted butter. The middle of each ring is filled with sweet curd filling, lightly pressing it to the base, and then the egg-milk mixture is carefully poured over the curd with a teaspoon. If desired, place a piece of candied fruit or dried fruit in the center of each cheesecake.

Place the frying pan on low heat, cover with a lid and fry for 3-5 minutes so that the filling “sets” a little. The finished cheesecakes are left in a frying pan or baking sheet until completely cooled, and then transferred to a dish. When hot, the filling may fall out.
