    The birthplace of kefir is the foot of Mount Elbrus, the Caucasus is a great health resort.
    It is very fair that this invigorating and healing drink appeared there. For a long time, the secret of making kefir was known to few and was passed down in the family from father to son in the same way as, for example, French cheese makers passed on the secrets of making their signature cheese. That is why kefir began to be produced in Russia quite recently - only at the beginning of the 20th century. And the legend of the appearance of this fermented milk product in our country is very exciting! In 1908, a beautiful and young graduate of the dairy school and an employee of the Moscow dairy company N. Baldanova, Irina Makarova (and in her marriage, Sakharova) went to the north of the Caucasus, accompanied by her partner Vasilyev, to discover the secret of making kefir. But before this secret was revealed, the Karachai prince Bekmurza Bakchorov fell in love with the girl. Makarova and Vasiliev stayed in his mansion for a whole month, traveled around the villages and tried to get kefir grains. But their efforts were in vain. Desperate, the researchers decided to go home, but their way was blocked by horsemen who kidnapped Irina. She came to her senses in an unfamiliar hut, when Bekmurza was already standing next to her with a lush bouquet of flowers and offered to become his wife. But it was not there! Vasiliev turned to the guards of order in Kislovodsk, and the case of Irina’s kidnapping came to court. But the local judge did not want to spoil relations with the famous kefir magnate and begged Irina to forgive him. She forgave, but in exchange for 4.5 kg of dry kefir grains.

    And very soon the first batch of medicinal kefir arrived at the Botkin Hospital in Moscow, and a couple of months later it was already sold in stores.

    Which kefir is healthy?

    For the kefir diet to be successful, you need to use 1% kefir (40 kcal per 100 g). Its properties are the same as those of 2.5% (55 kcal per 100 g), and its fat content and calorie content are lower, which, of course, is to our advantage.

    In Russia, kefir production is controlled by an interstate standard (GOST), according to which 100 g of a quality product must contain:

    • 2.8 g protein;

    • ¼ teaspoon baking powder;
    • 2 teaspoons honey.

    Mix crushed oatmeal with kefir and let it brew for 20 minutes. Next, add baking powder, honey and mix thoroughly. Fry the pancakes in a non-stick frying pan without adding oil until golden brown.

    Recipe for diet pancakes with kefir

    You will need:

    • 500 ml kefir 1% fat;
    • 1 cup flour (oatmeal, buckwheat or rye);
    • 3 tablespoons honey;
    • 2 chicken eggs;
    • a pinch of salt;
    • ½ teaspoon of soda.

    In order not to fall off the diet, you need to properly prepare for it. Nutritionists advise that a week before starting the diet itself, you should begin to gradually reduce the number of calories you consume: no more than 1400 kcal per day. Also, to successfully complete the diet, it is necessary to exclude harmful foods from the diet in advance, so that a sudden transition to dietary nutrition does not become a huge stress: baked goods, sweets, fried and salty foods.

You can always stop and pull yourself together, and the best way to do this is through physical activity. Go for a jog or walk, and then drink a glass of kefir and return to the diet with the condition that you extend it for another day.
