Ingredients:
- Cottage cheese – 180 gr.
- Egg – 1 pc.
- Sugar – 100 gr.
- Flour – 200 gr.
- Soda – 1 tsp.
For cream:
- Sugar – 160 gr.
- Vanilla sugar – 8 gr.
- Egg – 2 pcs.
- Corn starch – 2 tbsp.
- Milk – 200 ml.
- Sour cream – 300 gr.
- Butter – 70 gr.
Cooking process:
- First, let's prepare the cream. To do this, combine all the indicated ingredients in a saucepan. Cook the contents over low heat for about 5-7 minutes. During the cooking process, stir the mixture constantly until it thickens.
- Let's get down to the basics. In a deep bowl, combine cottage cheese, sugar and egg. We begin to knead and gradually add flour and soda. Stir until a thick, homogeneous mixture is obtained.
- From the resulting dough we form a neat sausage and cut it into eight equal parts.
- Roll each part into a thin, neat circle.
- Fry each cake in a hot frying pan for a couple of minutes on both sides.
- Let's start assembling the cake. Place the first cake on a flat plate. Cover it with cooled cream.
- We do the same with the rest of the cakes.
- Coat the entire cake with the remaining cream. If desired, you can decorate with cookie crumbs. Place the dessert in the refrigerator for an hour and a half.
- Delicious and soaked curd cake in a frying pan is ready. You can try!

If you take care of your figure, you don’t need to give up homemade treats at all. We offer you to prepare a delicious and healthy curd cake. The treat will be tender, airy and low in calories.

Ingredients:
- Rice flour – 10 gr.
- Egg – 2 pcs.
- Cocoa – 10 gr.
- Corn starch – 10 gr.
- Baking powder – ¼ tsp.
- Water – 1.5 tbsp.
- Salt – 1 pinch.
- Natural sweetener - to taste.
For the curd layer:
- Low-fat cottage cheese – 250 gr.
- Natural yogurt – 200 gr.
- Milk 1.5% - 100 ml.
- Natural sweetener - to taste.
- Gelatin – 7 gr.
- Water – 70 ml.
For the cherry layer:
- Frozen cherries – 300 gr.
- Water – 200 ml.
- Gelatin – 5 gr.
- Natural sweetener - to taste.
Cooking process:
- First, fill the cherries with hot water and leave for a while.
- Preparing the first layer. Separate the whites from the yolks. Beat the egg whites together with natural sweetener until fluffy.
- Beat the yolks with sweetener and salt.
- Mix flour with cocoa, cornstarch and baking powder. Add the mixture to the yolks and begin beating.
- Add the whipped whites here. Stir.
- Pour the mixture into a silicone baking dish.
- Cook for 15 minutes at 180 degrees.
- Place the sponge cake on a plate with a special ring for shaping.
- For another layer, whisk together cottage cheese, yogurt, milk and sweetener.
- Dissolve gelatin in water and let it swell.
- Then we heat it in a water bath or in the microwave.
- Pour the cooled gelatin into the curd mass and mix.
- Pour the mixture onto the biscuit. Place the preparation in the refrigerator for 3-4 hours.
- After a while, remove the cherries from the water, let them dry and spread them over the curd layer.
- From the remaining cherry juice, measure 150 ml. Dissolve gelatin in it, let it swell and heat it.
- Pour the cooled product over the berries.
- Place the dessert in the refrigerator until the top layer has completely hardened.

What to remember
Recipes for dietary baking are so varied that you can devote a lot of time to them. In general, the following can be said about such desserts:
- For their preparation, sugar is not used (or in very small quantities); instead, a sweetener is usually used. There are examples when dried fruits such as dates replace sweetness.
- Wheat flour is also a product that people try not to use in these dishes. Its place is taken by ground bran, oatmeal, rice, oatmeal, and corn flour.

Baking for a slim figure
Desserts prepared at home are a guarantee that the baked goods will be truly healthy and will not contain any preservatives, harmful additives or fatty creams. Curd cakes for a slim figure provide the body with the calcium and protein it needs, and also, which is important for those on a diet, a boost of good mood.
You don’t have to worry too much about their energy value - by choosing the right ingredients, you can even make Napoleon low-calorie. What can we say about cottage cheese cakes! The average calorie content of such desserts usually does not exceed 160-220 kcal per 100 grams.
What's in it
Before we cook anything, let's go over the ingredients of this baked goods. Typically it includes one or another of the following products.
- Fat-free or low-fat cottage cheese (in the recipes below I will not indicate the fat content of cottage cheese; I hope everyone understands that the fat content tends to zero).
- Ground bran, flakes (instead of wheat flour)
- Berries, fruits – fresh, frozen
- Low-fat or low-fat dairy products (sour cream, milk, cream)
- Eggs
- Butter (for adding to dough)
- Vegetable or olive oil - mainly for greasing the mold
- Gelatin is made from ground animal bones, cartilage, skin and veins. It is considered good practice (and very useful) to replace it with agar-agar.
- Agar-agar is algae, a vegetable substitute for gelatin. They are welcomed by both vegetarians and those losing weight due to their plant origin and very healthy composition - high potassium content, also includes calcium, magnesium, iron. Low in calories (no fat at all, total energy value - 26 kcal per 100g). Calms hunger because it contains coarse fibers, traces of which remain in the powder made from it. They dissolve more slowly in the stomach and stimulate cleansing of the intestines and removal of toxins. They dissolve completely only when heated to about 100 degrees. It is believed that 2 tsp. agar powder is replaced by 1 tbsp. gelatin.
- Dried fruits, nuts - as a filling, for sweetness. These are dates, raisins, prunes, dried apricots, chopped walnuts, almonds, hazelnuts and others.
- Sweeteners such as stevia, a natural sweetener.
- Honey is another sugar substitute.
- Raising agents, flavorings (vanilla), lemon zest.

An original cake for your table - curd cake with whipped cream. The sweet treat is suitable for both holidays and regular tea drinking with the family. Take note!

- Butter – 100 gr.
- Kefir – 1 tbsp.
- Sugar – 150 gr.
- Egg – 2 pcs.
- Ginger powder – 15 gr.
- Baking powder – 5 gr.
- Soda – 0.5 tsp.
- Salt – 1 pinch.
For the curd layer:
- Cottage cheese – 350 gr.
- Butter – 150 gr.
- Sour cream – 50 gr.
- Powdered sugar – 120 gr.
- Vanilla sugar – 5 gr.
For decoration:
- Cream – 250 gr.
- Powdered sugar – 50 gr.
- Candied fruits - to taste.
Cooking process:
- Pour kefir into a deep bowl, add salt, sugar and whisk.
- We also break chicken eggs here.
- Next, pour in the melted cooled butter. We continue to beat.
- Gradually sift the flour with baking powder and soda.
- Add ginger powder.
- Beat the dough until smooth.
- Then pour it into the mold and bake for 30 minutes at 180 degrees.
- For the curd layer, thoroughly beat the ingredients indicated in the list.
- Coat the baked crust with the mixture.
- Whip the cream with powdered sugar until fluffy. Place the dough on the curd layer.
- Decorate the cake with candied fruits, put it in the refrigerator to soak and serve.

- Add two types of sugar here and grind the contents.
- Drop pieces of butter into the mixture.
- Add sifted semolina.
- Add soda slaked with boiling water.
- Knead the dough with your hands until smooth. It should come out soft and tender.
- We transfer the workpiece into a bag and let it rest for a while.
- Next, divide the prepared dough into five equal balls.
- Roll each of them into a neat thin pancake.
- Fry the curd pancakes in a hot frying pan without oil on both sides.
- The optimal thickness of the finished cakes is 5 mm.
- Let's prepare the cream. To do this, thoroughly beat the sour cream with powdered sugar.
- Let's start assembling the cake. We stack the cakes on top of each other and generously coat them with sour cream. We also coat the entire workpiece.
- Sprinkle the treat with grated chocolate and put it in the refrigerator for several hours.
- Serve a delicate curd cake with sour cream. You can decorate with marmalades!

How to make a keto cake instead of a regular cake
A keto menu can include cakes, sweets and even sweet pancakes. True, you will have to prepare them yourself and only from approved products. The recipes contain sugar- and gluten-free ingredients and contain minimal amounts of glucose.
The necessary sweetness is obtained through an alternative:
- sweeteners for baking;
- stevia;
- carbohydrate-free syrups;
- a small handful of fresh berries.
