Protein test: how NOT to spot a fake?
We categorically DO NOT RECOMMEND testing protein based on its organoleptic and taste characteristics . These include:
- Dry powder consistency
- Appearance of grains
- Protein smell
- Taste, aroma and color of the prepared protein shake
The consistency of dry protein can be either homogeneous or lumpy - it all depends on the composition, shelf life of the product and the characteristics of its use. Thus, Nitro-Tech protein contains taurine, creatine and digestive enzymes. Creatine monohydrate has the ability to “bind” water molecules. Therefore, it often leads to the formation of lumps. Does the presence of lumps indicate that you bought a fake? Not at all.
Appearance of grains . Protein is a fine powder that looks like powdered milk. It is impossible to distinguish it from the latter “by eye”. It tastes quite realistic to an “experienced” athlete. In addition to protein, 99% of proteins contain colors and flavors. They are present in products in the form of medium and fine grains and may differ in color, shape and size. Therefore, if particles a la Ariel bleaching powder are present in the dry mixture, this does not mean that the protein is fake.
The smell and color of protein (protein shake) . Protein is a product made from protein raw materials - soy, whey, egg albumin. Raw materials from batch to batch may have a different percentage of protein, composition and even color - within the limits of the absolute and relative error accepted by the manufacturer. It is logical that the finished product may differ in appearance, taste and smell.
If in winter you bought whey protein made from whey, in summer you may get a copy with a completely different color/smell. Why? The diet of cows (and whey is obtained from their milk) in winter consists of 99% dry hay; in summer, animals eat grass. Hence the seasonal differences. Does this mean that your protein with a different color or smell has not passed the authenticity test? Absolutely...NO. Unless the cows took part in the universal protein conspiracy.

How to check the authenticity of a protein: what methods CAN be used?
Ideally, laboratory ones. Only chemists can give an accurate answer as to what the protein content is in a protein, whether it is a quality product or not. Everything else is just an attempt to identify the protein within the protein. Express assessment methods include the following.
- Protein crunch . The protein has a crumbly consistency and, when squeezed, makes a sound vaguely reminiscent of the crunch of snow or coral sand. Flour and starch do not have such properties.
- Protein rotting . If you have been consuming protein for a long time, you have probably noticed that after taking casein, whey or milk protein, there is... a characteristic smell from your breath. This is due to the breakdown of protein compounds. You can conduct a similar experiment at home by leaving the prepared protein shake in the sun or near the heater. At elevated temperatures, the protein will decompose, emitting a putrid odor. Starch and flour will simply swell.
